Old El Paso® Fajita Kit
In this kit – 8 Tortillas, Fajita Spice Mixes , Mild Mexican Salsa


2 tablespoons olive oil
600g chicken breast fillets, cut into thin strips
1 large onion, thinly sliced
1 eggplant, cut into 1.5cm cubes
1 cup light sour cream
1 Lebanese cucumber, finely chopped
2 tablespoons chopped parsley
  1. Preheat BBQ or pan. Combine Fajita Spice Mixes and oil in a bowl. Add chicken & toss to coat.
  2. Add half of the seasoned chicken to very hot pan & sizzle for 4 minutes. Remove from pan & repeat with remaining chicken. Place chicken aside. Add onion & eggplant & cook for a further 4 minutes. Return chicken to pan and toss to combine.
  3. Warm to separate tortillas. Open tortilla pouch, discard freshness sachet. Microwave tortillas in pouch on HIGH/1100 watts/100% power for 35 seconds or remove from pouch, wrap in foil & heat in oven at 180°C for 10 minutes.
  4. Combine sour cream, cucumber and parsley. Spread sour cream mixture onto warmed Tortillas. Top with chicken, onion & eggplant. Drizzle with Mild Mexican Salsa.
