- 1 tablespoon olive oil
- 1 large white onion, finely chopped
- 200g button mushrooms, sliced
- 500g lean beef mince
- Old El Paso™ Stand ‘N Stuff™ BOLD Nacho Cheese Taco Kit
- 400g medley assorted cherry tomatoes
- 1/2 cup chopped fresh coriander
- Mixed lettuce
- 1 cup grated tasty cheese
Preparation
- Heat olive oil in a large frying pan over medium heat. Add 1/2 the onion and mushrooms and fry for 5 minutes until softened. Add beef and stir with a wooden spoon to break up lumps. Add the Taco Spice Mix and stir for 1 minute. Add 3/4 cup water and simmer for 2 minutes, or until sauce thickens
- Heat a little extra olive oil in another frying pan and toss tomatoes over a high heat or 4 minutes or until skins are blackened and blistered. Place in a serving bowl
- For a Fresh Salsa, combine remaining white onion and coriander
