BOLD Nacho Cheese Tacos with Beef and Mushrooms

Nacho Cheese Tacos

Make a BOLD statement with mushrooms and blackened tomatoes to create a taste sensation. This is nacho average taco!

  • Ingredients 9


  • 1 tablespoon olive oil
  • 1 large white onion, finely chopped
  • 200g button mushrooms, sliced
  • 500g lean beef mince
  • Old El Paso™ Stand ‘N Stuff™ BOLD Nacho Cheese Taco Kit
  • 400g medley assorted cherry tomatoes
  • 1/2 cup chopped fresh coriander
  • Mixed lettuce
  • 1 cup grated tasty cheese


  • Heat olive oil in a large frying pan over medium heat. Add 1/2 the onion and mushrooms and fry for 5 minutes until softened. Add beef and stir with a wooden spoon to break up lumps. Add the Taco Spice Mix and stir for 1 minute. Add 3/4 cup water and simmer for 2 minutes, or until sauce thickens
  • Heat a little extra olive oil in another frying pan and toss tomatoes over a high heat or 4 minutes or until skins are blackened and blistered. Place in a serving bowl
  • For a Fresh Salsa, combine remaining white onion and coriander
