Lentil and Bean Tacos

  • 1 Old El Paso™Hard n Soft Taco Kits
  • 1 onion, finely chopped (150g)
  • 1 tbsp vegetable oil (11g)
  • 1 x 400g can green lentils in water,
  • drained and rinsed (240g)
  • 1 x 400g can mixed beans in water,
  • drained and rinsed (240g)
  • 1 pack mixed salad leaves (about 90g)
  • 1 medium avocado, sliced (145g)
  • 100g coconut yoghurt
  • 125ml water
  • 1 small pack cherry tomatoes, quartered
  • (about 16 tomatoes = 240g)

Preparation

  1. Heat the oil in a large pan and cook the onion until soft.
  2. Stir in the beans and lentils, then add seasoning from meal kit and 125ml water, bring to boil and simmer for a further 10 minutes.
  3. Heat the tacos according to the pack instructions.
  4. Load the tacos with the lentil and bean mixture, mixed leaves, tomatoes and avocado, and drizzle with yoghurt and salsa.

Expert Tips

  • For extra colour, add chopped pepper or sweetcorn to the beans.
  • For extra crunch, swap the salad leaves and avocado for shredded red cabbage and grated carrot.
  • If there is any leftover lentil and bean mixture, chill it and use for brunch or lunch the next day in a wrap
